Disappointing
I bought this book locally under its alternate title "Choux". It has the same front page image. Although a beautiful book with lovely photographs and lots of interesting combinations using choux pastry, I have been disappointed in the recipes I have tried so far with neither my éclairs nor the crème pâtissière turning out well. I don't think there's enough detail in the crème pat recipe and the texture of the choux was wrong, yielding soft shells. I'm reverting to the recipes in my trust Pue and Pastry Bible by Rose Levy Berenbaum because, although fussier, they always yield good results.
