Can this resin handle working in wet conditions, like some I'm familiar with in the past? Thanks

We recommend drying everything off and wiping it with acetone. It is not recommended to use in wet conditions. It will be waterproof once it cures.

Is there a difference in cured strength between fast medium and slow hardeners? Thanks

As with all hardeners, the slower the cure, the stronger it is. But there isn't that much differene.

How does this compare to ding all's epoxy?

I've never used Ding All, but I imagine it will work just the same.

Square footage per gallon

Depends on what fiberglass you are using with it. Heavier fiberglass will need more. Lighter fiberglass will need less.
