You can mix it into whipping cream and it would tint it pink, but it wouldn't dissolve completely since whole berries have been used to make this powder.

Q: How well does this dissolve in water? Can it be used to flavor sparkling water?

This is a dehydrated powder, intended for baking. I suspect it would float in water. It is pure (dried) raspberries, without any sweetener added.

Q: Does the packaging say gluten-free on it? I need the <20 ppm guarantee of no cross-contamination so 'gl being in the marketing materials isn't enough.

The product contains 100% freeze dried raspberry which means there’s no gluten at all.

Q: Is this actually sweet?

Not comparable to banana, but it's a mixture of tart and sweetness
