This product is conventional. There is an organic version of the 5 oz peeled as well as a 13 oz peeled organic.

Can these be frozen to extend expiration?

Yes, they can be frozen but it will affect texture. The best by date is about 6 months to 1 year at room temp and should refrigerated after opening and will last many months.

Can you cook it in a microwave?

I'm sure you could warm it in a microwave, but why? It has a sweet, intense, terrific taste as is. It is not a sharp "garlic" taste that is best cooked in some manner, the preparation has already done that. Raw garlic is an aromatic, best cooked. Black garlic is not, in my opinion. I slice it into smaller pieces, and simply add it to foods. (Sometimes, I just take a piece out of the jar and nibble it. It's that good.)

to clarify, it has one year shelf life whether or not it is refrigerated? My dad likely wont' store cold due to tiny fridge in retirement home.

I bought this from the vendor at a Chicago farmers market 2 years ago. It’s been in the fridge opened and I just ate some and they are fine. They seem to last forever. I forgot they were in there otherwise they would be long gone!
