Perhaps the best value for money knife you can get out there. One of the best knife brands, the filet knife is extremely sharp and so easy to use . Tried it on couple meat and fish and feels fantastic. It is stainless steel, the handle is not fancy but even professionals chefs dont go fancy on filet knives. Swiss quality at its best.

this knife is very sharp it is very flexible, if that is what you are looking for. I do prefer a more substantial spine on my filet knives It allows me to push on the spine of the knife so I can push down onto the spine of my fish and keep the cutting action slightly up. When I did this, it was so flexible it pushed the blade up. When I tried to correct it, the knife was so sharp it cut through the spine of the fish and I didn't notice until it was too late to recover. with a little adjustment to my technique, I was able to fillet my salmon very efficiently.

I am retired and live in Kodiak, AK. I go fishing for salmon and halibut a lot and this is my favorite filet knife by far. I let other people borrow it and they end up buying their own. I have owned one for a long time, I just bought this one because I lost my first one. (Later found it in my freezer).

Cuts great and easy to resharpen!

My husband has lived on a Texas ranch all his life. He has hunted game and has had to butcher farm animas for food during his lifetime. He takes great pride in his knives and ability to keep the edges razor sharp. I gave him two different sizes of these knives for his 71st birthday. He was hesitant to use them at first thinking he already had the sharpest knives in his collection. Needless to say, he was shocked at how well these knives keep their razor edge! He especially likes the way the knives are flexible, yet strong and will bend around a bone. He has bragged to his buddies about the excellence of these knives. He has replaced our old “best knives” with these…can’t say enough! 20 Stars!

Always looking for a good fillet knife as we do a lot of walleye a summer. After this summer season using this knife it hasn’t been a bad knife. I use a worksharp belt sharpener and as long as you touch this knife up every 6 fish or so it’s super sharp. Has a decent flex to the blade also. I’d say in the price range this is a great knife.

I liked everything about this knife. It is sharp, flexible, and easy to use. I fillet fish, clean shrimps, etc. I only use it for my fish and seafood. I know I probably could use it for more items, but it is so special for my fish recipes, and I do not botch up scaling fish, or taking off the skin like I use to. Thanks

If you want a dull knife so nobody gets hurt and it’s super safe to use, go looking elsewhere. This ain’t the one for you. Because THIS knife is Sharp as heck! Fileting fish like mad, very efficiently. You could scalp your hand and not even know it, oops. Enjoy!

Das Messer an sich ist natürlich Top, flexible Klinge, superscharft, toller Griff. So wie man es auch erwartet von der Marke. Leider ist das Messer beim Versand mit anderen verpackt gewesen, und so die Spitze verbogen und abgebrochen. Gerade zu Weihnachten ärgerlich. Allerdings einen besonderen Lob an die Serviceleistung an dieser Stelle innerhalb von 24h noch vor Weihnachten ein neues Messer zu liefern, bevor das defekte Messer zurückgesendet wurde. Und dazu noch dreifach verpackt, sodass man es hätte bis an das Ende der Welt liefern können. Echt Top!
