How I arrived at my overall rating: ***** (5 stars) Value ***** (5 stars) Purchase price: $5.64 Absolute steal at this price! Works just as good or better than boning knives costing $20. Quality/Durability ***** (5 stars) Duration of use: 2 years Edge holds up well, have sharpened twice. Have used it as the workhorse for breaking down meat and even fish. Extremely sharp. Handle is grippy so it feels slip resistant. Blade is not very flexible (bendy) but agile. Ease of Use/Assembly/Install: ***** (5 stars) The curvature of the blade took some getting use to. It's my go to boning knife now. Usefulness/Appearance/Fun Factor: ***** (5 stars) Extremely useful! I used to employ 3 knifes to do all my cutting. Have since bought specific knives to do more specialty tasks, and it makes a world of difference. It doesn't have to be expensive, just using the right tool for the job makes it that much more "fun" and if you then find yourself using that knife a lot, you can decide if you want to splurge on a nicer option.

Using it to trim and cut meats( chuck roll, ribeye roll etc). Seems sharp and stiff enough plus flexible enough. For larger Chuck rolls a longer knife would be helpful (no fault of this knife). I like the grip for my large hands, attractive price point too

We’ve bought 2!
This is the second one we have purchased. Not because the first one had any issues, but because we took it with us when we cooked out at my in-laws and my MIL liked it so much that we left it over there for her and just bought ourselves another one! This knife cuts through any meat like butter. I use it for trimming chicken and other meats primarily, but it’s one of the best knives we have by far. Makes prepping meats go much faster.

Use it for basic butchery, I like the curve. I kept losing my edge on my global, got sick of it. This is a great alternative, does the job.

I love Wiinco products. But the lack of edge on this boning knife is painfully disappointing. The steel is great, but that combined with being dull—to the point of me wondering if it's ever been sharpened—means that I'm going to have to get it professionally sharpened to get an initial edge on it. I say that after having spent much time and effort trying to sharpen and strop the blade myself. And even after that, I couldn't cut into a tomato if i sawed at it for an hour ... let alone meat, skin or tendons. I hope this was just a one-off-issue. I guess it's also a little less flexible than I'd hoped, but that's a minor thing.
