Not bad, for the price I think it’s decent

Wow. Fed up with having blunt knives and decided to spend more on a hopefully decent one. Not disappointed, it is SHARP, can cut thin slices of tomatoes and lemon. Really nice feel and weight. Going to buy a smaller one from the same range. Why have I waited so long!?

I have now had this knife for over 6 years! I am very impressed with it and have grown to prefer it over my zwilling profession s (granted 8inch vs this one at 6inch). I am kind of a knife guy. Very impressed with the balance, weight, feel and cutting. I sharpen tools for my woodworking and this knife takes an edge very nicely on resharpening. For the money, its amazing in my opinion.

The Mercer 6” Chef’s knife has a good edge, cuts well without bias, and feels balanced and comfortable in the hand. The absence of rivets in the handle is a great plus point for me. Hand wash it only, never ever in a dishwasher. The steel is good quality and if the claimed alloy has been used then it will keep its edge much longer than a more old fashioned blade. Always use a proper whetstone or sharpening steel to dress the blade. Out of the box it cut though a tomato under its own weight, one of the ultimate tests for how sharp a blade is. Trimming a steak was easy, fat and gristle were banished in a twinkling. I like this one.
