Would it be overkill to use Silpats over these? I know that they are coated but over time does this coating fade? Or cause discoloration?

No. I don't know about the job stick fading over time but they will start to change color to brown over time. They are good pans though plus they are made in my backyard and not in China with who knows what.

Are they warp resistant?

We have had our sheets for well over 6 years. No issues with warping and we use ours at 450⁰ at least 3x a week. Just let them cool. Best sheet pans for the money.

Will they warp in a hot oven?

They tell you not to put them in an oven over a certain # of degrees. I think it's 375 or 400, but I haven't had any problems as long as I stay in the right range.
