Q: Does the weight come with it?

Weight doesn't come with but you can use any convenient one. When applying the load of the press arm WITHOUT additional WEIGHT, we obtain a pressure on the form with a force of 4 lb. When additional weight is applied to different levels (arm length), the pressure on the piston increases.

Q: Could i paint this product with waterproof sealant and still use it to make cheese?

I don't think it is recommended unless it a food grade paint or coating. Because the cheese is inside the press for up to 24 hours it could leach chemicals and paint flavor into your cheese.
