We have no documentation or certification which would allow us to claim that our products meet the legal criteria for “gluten free”, which is less than 20 ppm. In addition, some of our manufacturing facilities may produce other items that do contain gluten and there is always a risk of cross contamination when wheat is present in the manufacturing facility. To reduce the risk of cross-contamination, allergen plans and protocols are in place at all facilities where Wilton products are manufactured.
