Can you blind the sensor to come on in brighter areas?

Sure, but it needs to be adjusted manually. These motion sensor lights have a built-in light sensor. When you open the cover of the product, you will find a small white component next to the LED, which is the light sensor. You can completely or partially cover this part with black tape to adjust the startup brightness of the sensor light (the default is 20LUX). When completely covered with black tape, the light sensor of the sensor light will fail and it will light up in a bright environment.

What's the sensitivity of the sensor to smaller movements like pets?

I would imagine if cats or dogs kept walking past,then it would be activated. I have made be in a cupboard and soon as door opens it turns on. 20 seconds after no motion detected it turns off! Hope this helps.
