Q: Once opened, how long does this last?

You can put what’s not used in the freezer again and keep it for at least 6months to a year. Without freezing I’d say as long as it’s not getting hard it’s good

Q: how do i soften this unopened paste that has been in refrigerator?

Take it out of the fridge and let it sit at room temperature for a while. Then knead it with your hands to make it softer. You can also put oil on your hands before kneading.
