It's simple, unfussy but very tasty food, that can be prepared quickly and cooked mostly using one dish so it's ideal after a busy day or for batch cooking at weekend and also for people with limited cooking skills or equipment. A simpler way of cooking, but a good basis for experimentation.
While I disagree with the preparation times given in the book (took me much longer) I have to admit that the basic suggestions can inspire many good meals with the minimum of washing up or standing by the oven. I have tweaked many of the recipes to include extra veggies, or to remove flavours that were not as enjoyable. I had to shop around for some of the more obscure ingredients, such as harissa paste, but Sainsburys came up trumps. Overall a good book to use as a basis for your own ideas, and the list of cooking times is a boon.

Simply perfect! Easy, yummy, healthy - buy it!
I can’t get enough of these books! Having lived on ready meals and snack foods for the best part of 40 years, lockdown drove me to trying to cook and reduce shopping trips. This book is revolutionary to those of us reluctant chefs. HEALTHY- On the wrong side of 50 I needed to address my diet to err on the much healthier side. This book enables me to eat healthy fresh food without having ANY culinary knowledge or stress. TASTY - I’m not a fan of spicy but like tasty and this book really hits the bells on the yummy scale. All so new and different - getting away from boring tasteless usuals. Anyone I’ve mackled one of these dishes up for has always been proper impressed. EASY - you literally just chop up the stuff she tells you and wack it on the oven! Walk the dog and it’s ready when you get home. All the ingredients are available at the supermarket and most are cupboard stocked. I can even bake PUDDINGS with this book! Having never successfully achieved anything edible in the baking department, these recipes work perfectly every single time! And all with a yummy twist (baileys in the coffee cake, cardamon in the chocolate puddings, cake layers in the apple crumble for just a few) I live alone so usually half the quantities which is enough for dinner and tea. I’ve bought all the books (except the world one as I’m not keen on spicy) and bought several for friends who have all been completely converted. Christmas presents sorted! Thank you Ms Rukmini for completely changing my life around for the better 😊

Simple recipes packed full of flavour. Rediscover the simple art of cooking.
Love love love this book. I bought it for my sister for Christmas and she loved it so much she bought it for my birthday a month later! The simple concept is that all the recipes can be cooked in a roasting tin in the oven (occasionally you need something extra like a pan for rice, but that's about it). Most recipes you just stick it in and leave it to "do its thing", but occasionally you need to add things at later stages. This sort of cooking is great for a stay-at-home mum like me. I can prep things in the afternoon and then leave it to cook. I've tried quite a few of the recipes, savoury and sweet, and they've all been delicious. The cover recipe of chicken, avocado, pomegranate and rice is amazing. The puddings are all quite simple and rustic - tarts, crumble, cobbler - not exactly show-stoppers, but good nonetheless. Each chapter also has info on cooking times for various ingredients, and an infographic to help you design your own variations on the meals. Roasting tin cooking could become a way of life! I also thought the portion sizes were good for a normal hungry adult. Unsurprisingly, as the author is a food stylist, the pictures are beautiful, and this helps inspire you to do the recipes. I really recommend this highly!

Disappointed - not all entire meals
I ordered this cookbook because I wanted delicious, one dish meal ideas to save time and also washing up. While several of the recipes are appealing, many of them are not entire meals in themselves - they are just oven cooked recipes. For example, chicken breasts with peppers & onions is not a whole meal. It would need potatoes, or bread, or something starchy; possibly a green salad too, as sides. I wanted tray bake ideas that incorporated the carb element too, for a balanced meal. Some of the recipes do that but not all. This makes me wonder what the point of this book is. If we still need to boil rice / cook a side, it’s not a meal-in-a-tin after all. Just a bit disappointed really.

I've cooked SO MANY recipes from this book and they are almost all amazing. So quick and easy to prep and only one dish to wash up. It's also helping me eat more vegetables. If you have an oven and don't enjoy cooking, this is an essential cookbook which will make you love cooking.
