Do I take my pans out like trays in a drawer (remove front panel and use as an open box), or like taking a hat of a hat box (all 4 walls intact)?

You take out from the top, so you remove the top lid, remove the wire grate, and you can have access to the pan on the bottom. It's a little inconvenient but overall I really like this proofer.

Does this unit store inside the folded proofer?

No, the additional shelf cannot be stored inside the proofer. Only one rack will fit inside when folded for storage.

Does the shelf kit fit inside the proofer when it is folded closed?

No it does not. The additional shelf kit will not fit inside the proffer when it is folded down for storage. Only the shelf that ships with the unit will fit into the unit when collapsed. There is no additional room allocated inside the unit to keep the contents snug and in place that the unit is sold with. The additional shelf will fit inside the shipping box with the folded down proofed unit, which is now we store ours, as the power cable will not fit in the folded down unit either….

Where do i buy the brod & taylor folding proofing machine?

Amazon currently shows it as available. I highly recommend this product. I know most ovens have added this feature for the last two years. I have an oven less than a year old but I still prefer my Brod & Taylor proofing box. Temperature is very even and usually just a bit lower than ovens which I think gets a bit hot. Good Luck!
