How thick is the sheet? Can it be used in a Cricut machine?

No. It's just acetate, so it would melt in the oven.

Can you watercolor on this?

I used this for cooking. I do not think the slick surface would hold watercolor paint. It might drive but would crack and chip off when the acetate was bent.

Can this be used with epoxy resin?

I would think NO with food. I always use tape.
