Great honey for mead making!
Honey works well in the mead making process and the mead produced tasted wonderful!Secondary note on honey in general- I have noticed several reviews on large volumes of honey containers saying that "There was sugar added or sugar in the middle of the honey." What happens to honey after it sits for a while is that it begins to naturally crystalize. The rate this happens is not consistent due to various factors of the honey too numerous to explore here. I believe these reviewers are not being misleading on purpose but just don't have experience with honey in larger containers or honey that has been harvested for several months and left in a container undisturbed. If your honey crystalizes, it is perfectly fine to use and there is an easy solution to turn it back into liquid form. Warm up some water to around 90 to 100 degrees, place your container of honey in it and let the heat gradually return your honey to liquid form. You will also want to leave the lid open to the container as long as the container is in no danger of being submerged completely (I suggest the water being about 1/2 to 3/4 of the container high. Also, DO NOT leave the honey container and water bath on a source of heat. Most honey containers are plastic and might melt if you do this. If you need to reheat the water to continue the process, remove the honey container while you reheat.I hope this helps everyone enjoy this and other honeys.

Best honey ever!
It was so tasty and perfect for my wedding favors! We put them in 2oz jars and there was enough to fill around 110 jars.
