What are the inside dimensions of the channel.

The post base is designed to fit a standard 1-5/8 inch stick of unistrut (or equivalent), so it's nominally larger than 1-5/8 inches square. A standard length of strut will fit inside, and be flush with the ends of the opening.

Will this fit inside a square 2" sign post?

This is not designed for that application. It is design for 1-5/8" strut
