## Description

E-Jen containers are light, simple, and very easy to use and operate unlike heavy crock jars. Perfect for any kind of pickling and fermenting from Kimchi to Sauerkraut. Also E-Jen containers can be used to store just about anything and everything that fits inside. E-Jen storage container comes with an adjustable pressing plate that acts as an inner vacuum. Fermentation allows food to retain more vitamins and minerals than other types of preserving. The pressing plate keeps the kimchi/pickles in an airtight space promoting an anaerobic state benefiting the growth of probiotics (lactobacillus). Anaerobic process; requires an oxygen-free environment. If oxygen is present, the wrong organisms flourish instead of the friendly bacteria and/or yeasts we want to cultivate. The design and shape of the containers make it easy to store goods in both the refrigerator and in the pantry without taking too much space. It contains and blocks smells and odors better than most containers due to the double lids and prevents smells/odor from lingering in kitchens or refrigerators. This product is food safe, dishwasher safe, freezer safe, microwave safe, heat and cold resistant. All materials are BPA, DEHP and lead free.

Review: Outstanding upgrade from grandma's stoneware crock - Expensive but worth it. I bought this a couple years ago and put it to work. Have fermented a bushel of jalapenos + garlic to make a huge batch of hot sauce, have done multiple batches of sauerkraut, everything comes out right the first try. Currently have 40lbs of cabbage in there and the lacto fermentation is perfect for that sauerkraut tang. Managing air-removal is so much more easy due to the seal system and the burping valve. it's not 100% odor free due to having to burp the contents, but the exterior lid keeps the smell well-contained. If one wished to carry the crock outside, take off the lid and burp, seal it back up and then bring it back inside there would be virtually zero odor. (This is the way to handle garlic-heavy contents) Pushing the inner seal down exactly as needed to keep everything under the brine has eliminated unwanted mold issues. Cleaning this thing is so easy because it's lightweight and smooth and all parts can be disassembled, even the rubber seals. Just wipe out with a soft cloth to remove all particles (be sure not to scratch the plastic and give bacteria a place to hang on), rinse, then use brewery cleaner (I used PBW) and then brewery sanitizer (Star San). Moving and storing it is so easy because it's lightweight. No more massive clay crock that requires 2 people to shift and can crack if you slip. This goes on the top shelf in the garage when it's not in use.

**Q: Does anybody know where i can get instructions in english for this thing?**
A: The version sold by Crazy Korean Cooking (although different sizes and shapes) comes with the information in English. It is recommended to handwash with soapy water, though if you do not care about appearance it can go in dishwasher. The label can use pen or permanent marker (it says, though I would use expo). Basically for fermentation, you prepare the product the same as you would for any other container. Then after making sure the inside is clean, you put in the food. Depending on size it will be one solid inner lid or a two-piece. Make sure fermentation wants no air. Push in inner lid with the rubber stopper open. If it has garlic or ginger, it is recommended to leave the stopper open, though you can close it and it will open itself. Seal top lid and every so often open outer lid and stopper, make sure it is pushed down all the way (it acts like a fermentation weight). Let me know if that is what you wanted as far as info. I couldn't find a link or document with the instructions and threw mine away. They can go in the fridge and freezer or stay out depending on what you are keeping/ fermenting.

**Q: Does it make sauerkraut taste like the kraut in a traditional crock?**
A: I have never had sauerkraut in a traditional crock, but I can say that it makes very good sauerkraut.

**Q: Can I make miso in this?**
A: These containers are made for fermented sauces such as soy bean paste and kimchi so it would be great for miso. Please use uncontaminated utensils to transfer miso to prevent molds.

### ⭐⭐⭐⭐⭐ Great for sauerkraut

Got this for making sauerkraut. Works great. The inside cover can slide down the sides and has a plug that when removed allows the removal of all air, leaving just the cabbage covered by the brine in an anaerobic state when plug is reinserted. Have to check every couple of days or daily to release gasses that have accumulated from the fermentation and push the cover back down. I removed some after 7 days and the kraut was good. Refrigerated some and left some to see how it would do with more time. appeared to only get better with time. No spoilage as often occurs with crocks. Highly recommend.
