A: I don't know what gaps intro diet is, but this sauerkraut is pure - just cabbage, water and salt. It says "no GMO", no sugar, no preservatives. It doesn't say "organic". It is delicious. The best I've ever tasted by far.

This is a very staisfying food item. It isn't sour or bitter or garlicky like so many other brands. I mix it with freshly grated raw beets and a small amount of freshly grated ginger. I eat a large tablespoon of this mix every morning.
