I'm always on the lookout for a good "stirrer" for making a roux. If you're going to use Chef Paul Prudhomme's high-heat method, this whisk is the ticket! It moves the flour around in the bottom of the cast iron skillet better than anything else I've come across. I can keep my heat blasted on high and finish a dark roux in less than 10 minutes. If I had to make a wish list for this tool - it would only be that it was a few inches longer and was available with a wooden handle. I absolutely recommend this for anyone who's looking for a whisk that easily and efficiently covers a lot of ground on the bottom of the skillet.
