Review: Having tried Thai curries for the first time on an amazing holiday in Thailand, I was rather disappointed when trying to replicate flavours using pastes from supermarkets in the UK. Having tried Mae Ploy's Penang curry paste with great success (and compliments from guests), I decided to try this company's red curry paste to see if that was as good. I was not disappointed. Both bring back the memories of dinner on the beach and lunches in the jungle. Please note that this is a fairly spicey curry (as it should be) and the instructions clearly state to use half the stated amount of paste if a milder curry is desired. My wife and I like a hot curry and actually add a green finger chilli with the vegetables. Basically, you can tailor this to your taste (something you cannot do with jars of curry sauce). A useful tip: When first opened, I divide the paste into single-recipe weights and store in the freezer in individual small tubs. This way, they have lasted over 18 months without any deterioration in flavour and are instantly ready for cooking. I would not hesitate to recommend these curry pastes to anyone who enjoys authentic Thai curries.

**Q: does this need to be refrigerated after opening, how long will it last after opening, thanks**
A: Yes, it does need to be refrigerated after opening because it doesn't contain any preservatives; however, it does contain a fair amount of sodium (570 mg/2 tsp) in the form of salt and shrimp paste (which contains salt), so it has natural preservatives. To be honest, I plan to give it away because I don't eat shrimp and hadn't noticed it was an ingredient, but I have other Thai red curry pastes that last months in the refrigerator. The container is 400 g, and they recommend using 50 g / recipe, so that's 8 recipes. That gives you an idea about how long it will take you to go through the container based on how often you prepare Thai red curries.

**Q: Can anyone explain the difference in taste between this brand's red curry and the panang curry?  Thanks!!**
A: Hi KC,         The major difference between the Mae Ploy red curry paste and the Phanaeng curry paste is the difference in the amount of heat you experience when the curry hits your taste buds. The Phanaeng  curry is much milder in taste and can be consumed by almost anyone in the family without having to alter the recipe to suit others that have a low tolerance to spicy dishes or deserts.

**Q: what is the sell by date on red and green curry paste and once opened can you store at room temperature or does it require refrigeration once opened?**
A: As to whether or not it needs refrigeration it does. I  keep mine in the freezer!  I cut a corner off of the inner bag that contains the curry paste, and squeeze some out whenever I need it, directly from the freezer. It'll squeeze when frozen. Then I put it back in the outer cup and back in the freezer!

**Q: how does this brand and thai red curry paste compare to Thai Kitchen brand?**
A: I have only used the Thai Kitchen paste and tried to make my dishes taste like my favorite Red Curry Chicken at the restaurant.  I couldn't get it to taste even remotely like the dish other than the sweetness of the coconut milk.  I have only used the Mae Ploy once, but even the smell was different!  I will NEVER go back to store bought again!  This stuff is AMAZING!!!!  That said, it is definitely spicy, so if you are not a spicy fan, keep it to a minimum.
