The Shapton glass is smooth as butter and always a blast to sharpen on but the kurumaku is much thicker and will last longer and although it may not be as “nice” and the Shapton glass it certainly is no slouch. Hope this helps. **Q: What is best whetstone for maintaining chef’s knives?** A: For me it is the suehiro 5000 rika for maintaining a knife edge. Is a good finish and as fast as you can get. 2 stones is ideal, a 1k like chosera or the shapton then the 5k rika for finish and maintenance or keep going higher but for knives 5k is good and still mildley toothy. **Q: Should i buy the 1000 grit or 2000 grit whetstone ? most of my knives are vg-10 and hrc 62 .** A: I use the 1000 stone for most all knives. It will cut faster. Both are good, but if your just doing tuneups go with the 2000. If I didn’t have one I would go with the 1000 and strop. If your looking for a second stone check out the chosera 3000.
