What yeast is best for both light and dark wines?

LALVIN EC-1118 (SACCHAROMYCES CAREVISIAE) (EX-BAYANUS) MAKES THE BEST LIGHT OR DARK WINES, with an alcohol content of 14-16%

Lets say i add this to juice/sugar for hard cider. once fermented, i add potassium sorbate. is there anything else i'd need to do before drinking? ty

If your Seiter is too sour(dry) you add the sorbate to kill the yeast. Then you can add sweetener like concentrated apple juice or sugar and water and it won’t start fermenting again.
