Shipping Weight shows 25 pounds but the picture shows 50 pounds. How many pounds does this flour?

They had 50s and 25s. I ordered a fifty and then noticed they had 25s so I got a 25 pounder instead of a fifty. King Arthur will be back soon hopefully. I made a pizza today from 36 hr ferment, high hydration, 3 tsp yeast, 1/8 tsp amalayse, 3/4 cup water, 1/4 tsp salt, 3/4 Tblsp sugar and a Tblsp of olive oil. It turned out similar to King Arthur Bread flour. I made hamburger buns that are superb from this flour.

Does this flour have bioengineered ingredients?

If you mean gmo wheat, yes, it does. Almost all flour will have at least some. Is European flours have less because there is somewhat less gmo processing there and different food standards, but the thing to remember is that flour mills buy from a lot of input customers and farms, and they all use different techniques and fertilizers. Sometimes the grain batches are from very different geographic areas far apart. So, unless a flour says specifically that it's non gmo, it is. If it's not, it's very expensive simply because of the difficulty to obtain and sort the grain like that.

What is protein percentage?

Per General Mills: “ Contains a 14.2% protein level.”

Is this good for making bread?

It's perfect for making bread and noodles.
