Great Start
This book was a great starter and had a little bit of everything. My son homeschools and we have been making cheese for a long time as one of his activities. This was the first endeavor into plant based cheese making. This should have come with a warning though about the need for a high end blender in order to get the right consistency as well as more in-depth discussion on how to create curds which is how most smooth plant based cheese is made. Training cultures on plant based milk is challenging.

not what I expected
If you thought you had found the holy grail of actually making plant based cheese using cultures in a similar fashion to making regular dairy cheese this is not it. The author just has about a paragraph stating that they are experimenting and hope to be able to do that some day. Misleading in my opinion.

Um, no.
Waaaaaaay too fussy. Need a completely separate refrigerator to make vegan cheese - Are you kidding me??! Definitely not for the average person with a life and a budget.

Goodlooking book but very poor content
Disappointing.The information provided could fit in a couple of pages, instead it was spread out over an entire book.Lots of fluff, little substance. Not what I would expect from "professional" cheese makers.

Too complicated
This book is written way to complicated. If you want to try making vegan cheese you’ll feel discouraged after reading this book, before you even tried! After reading the book I ordered a starter kit with someone else and making vegan cheese turned out to be easy enough (you just need patients!).
