For this knife to stamped steel and not forged, excellent quality, high carbon steel content and holds an edge very well..I cooked professionally for over 20yrs and would definitely buy this knife again!!

One knife to own!
This knife was recommened by a local chef to her cooking class, with my wife in attendance, as the one knife you need if you can only have one knife. We got it and my wife loves it. Caution, this knife arrives very sharp. It is made with usual Victorinox quality.Oops, I was reminded by my wife, the chef said you only need two knifes....this one and a good paring knife.
