Are the adc readings on these consistet? meaning full throtle 1024, center 512, and fully pulled 0.

No. All 10 of my joysticks max out at 1024 when you barely move the stick. You get maybe 1/3 the actual throw before you reach 0 or 1024. None of my 10 joysticks centered at 512 either. One of them centered at 400 and had absolutely zero throw before it hit 0.

Is there a way to remove the centering mechanism without destroying it?

Not with my level of expertise. It's springs inside the metal casing of the potentiometer. I wouldn't rsk it but I am a dabbler in DIY.

Will the joysticks fit a ps2 controller?

I doubt these will be suitable for a Playstation or any other kind of decent controller. These are low quality experimeter's parts. If you want higher end parts try a dedicated parts store like digikey, jameco, or mouser.
