I call this my miracle ingredient
I love using this to make gravies and sauces, as well as desserts. I love being able to add it to cold liquids without needing to activate the thickening by boiling. I also love being able to add it to hot liquids.

Works with hot or cold liquid
I use it to thicken sauces that I make to squeeze on top as extra flavor and presentation to my meals served on my food truck. It is easy to use but sometimes I feel that I have to use too much, however it does allow me to thicken sauces w/o heating them up so it is convenient in that fact.One note: When thickening sauces do not just keep adding until you see it get to the consistency that you want as it will continue thickening over time, so make sure to wait about 10 min after you get it close to the consistency you want otherwise it will get too thick.
