Excellent Risoto Rice
I made mushroom risotto with this rice and it came out perfectly. My family raved about it and asked me to make it again soon. As with all risottos, one must keep stirring it as it cooks, and it takes some time to absorb all the liquid. But that is the reality of making risotto. This rice absorbs the flavor of the broth or other liquid used to make the risotto, so I can make it with cream of mushroom soup to get a richer mushroom flavor in the dish. All in all, this is the best risotto rice I've used.

Posh rice. And it is good.
The way chefs go on and on about Carnaroli rice you’d think this stuff was flown in from another planet (where the rice is really good). And my experience is that these chefs are absolutely right. Outer space, Italy, wherever, this is great rice. If you prepare rice in a rice cooker, then I’d say buy other, less expensive rice. If you want to cook WITH the rice, have rice like in your skillet amongst other lovely ingredients (smoky mushrooms, butter, fresh herbs, etc.) then get this stuff. In a skillet, I stirred FIVE CUPS of low sodium broth into one and half cups of this rice. I could have stirred in more. I am not the world’s foremost expert on anything, and certainly not rice, but the absorbent nature of this rice is astonishing. Think about how much flavor you could pack into this rice. If you use broth with any sodium/salt in it whatsoever and cook it into this rice, the result will be an inedible disaster. It’d be too salty to eat. I’ve had results where the rice is just-right firm and where it oozes creaminess (I think this is mostly just starch but it feels good in the mouth). I feel that it’s wasted in a rice cooker. Now get back into the kitchen!

Perfect For Arancini
Carnaroli rice is the best option for making arancini and this brand is very good, especially for the price compared to other brands. You can get away with using arborio rice for arancini but carnaroli is has more starch, making it easier to form balls due to the texture being stickier.You can use arborio and if it's not holding the shape of a ball too well, you can scramble eggs in a bowl then add it to the cooled rice to make it hold its shape.In my opinion, if you're going to spend the time making a good Bolognese sauce, prepare the rice and let it cool, prep other things to put inside like peas and mozzarella, then go with the best choice...carnaroli rice!
