A WORK OF CULINARY ART!
This is a beautiful carbon pan...i am very much impressed.Looks a bit flimsy in the pictures but this pan is extremely solid, 3 mm thick for sure, great weight and balance.the long handle is amazing, elegant with beautiful proportions. handle does get hot around the venting tho, can't really place thumb in center groove but the back third of handle stays relatively cool....silicone handle is still recommended. beautiful construction, love the rounded transition from pan bottom to the flared lip, incredible. damn work of art, and i don't even know how they punched out that tiny Tasmania island so clean on the handle tip thru this thick steel, what craftsmanship!only a few minor negatives. the Australia punch out is a bit sharp on the edges, wish it was filed down a bit more. Also the factory pre seasoning is kind of lame, says it was soy oil, but only one thin copper color layer. makes sense for shipping, especially the smooth finish version, which is what i bought (not the satin version). however i was able to strip it away preseason easily with barkeepers powder, water and a plastic brush... got it to silver metal in a few minutes, ready for re-seasoning!after cleaning i laid down 4 layers of seasoning on entire pan in 450°F oven (3 flaxseed oil, 1 coconut oil - 2 hours baking, then 2 hours cooling before next coat). first initial cooking with fried potato skins and heavily oiled hash browns were smooth as silk, absolutely no sticking or spotty seasoning removal. really impressed at how this holds the seasoning cook after cook, better than my Lodge cast iron or my De Buyer carbon pan.Also, slight negative for seasoning on handle tip, getting worn and not getting darker since not exposed to direct heat, have to figure out a way to get that seasoned separately to prevent rust since my hand is on it all the time.Regardless, everything about this pan is near perfection. If i didnt already have carbon and castware in other sizes i would buy everything from this company....very impressed AUS-ION, keep up the good work mate!

The Best Pans Ever!!!
I found these pans while looking for smooth cast iron (not a fan of the modern pebbled surface) and fell in love with them! They are super smooth, lighter, and stronger than cast iron. The care is like cast iron, so if you've never used cast iron before there is a learning curve. You also have to get used to not using as much heat because of how highly conductive they are. But, once you learn how to use them, they are so easy and incredibly non-stick. Here is a picture of scrambled eggs and the pan they were cooked in (the 7" skillet). I used only a little oil, and there was no sticking at all. It's more non-stick than any non-stick pan I've ever owned, and if something happens to the seasoning it's easily repaired. I love not filling landfills with old worn out pans and having a healthy and renewable alternative that lasts forever!

Solid pan
What a cool pan I’ve wanted one for along time. It is a thick steel and well balanced. I’m a fan of cast iron but this one definitely well worth the price for a steel pan I can’t wait to cook in it. It’s very smooth and well seasoned out of the box.

The Aus-Ion line and my experiences
This is just a beautiful and functional pan. I love carbon steel, and this was the best I could find.After seasoning it in the oven six times with flax oil, it worked great for about two weeks. Of course, the slickness didn't develop until a couple of weeks of consistent use after the oven seasoning, but it did develop and it was wonderful!Until it wasn't.There was a spot that began to grab my omelets no matter what I seemed to do. It was always the same spot in the pan.I tried treating just that spot my stove top seasoning, but no matter what I did, it just kept grabbing my food when I wanted a surface that was non stick. Eventually I ran it through the oven's self cleaning option, and started seasoning all over.Now it works just perfectly again, and this time the seasoning seems to be hardening on even better than before. It continues to get darker and darker, even when I don't think it CAN get darker. I might mention that this is NOT the satin version they came out with later to address the seasoning lifting off every now and then.At this point, I think the seasoning is more permanently bonded and less in danger of lifting.Time will tell, but I can always just strip it off and start again.I think sometimes the initial seasoning doesn't always work out the first time, and that sometimes an effort needs to be repeated until you get it right.I might mention that I have a 10" and a 12" pan in the same line WITH the satin surface. The 10" was spectacularly easy to get seasoned properly, but the 12" has presented some challenges, mostly because of the large size compared to the largest size burner on my stove (time for a stove upgrade, perhaps! YESSS!!). On the largest (12") pan, the heat from the burner is located to close to the center of the pan to evenly distribute across the entire surface, meaning I have blistering hot in the center and only mediocre towards the outside. This is no way to cook, let alone season. It's a challenge. The texture of the surface was supposed to make seasoning easier, but in this case it only exasperated an issue. As I said, the 10" was amazingly easy, so I would think the 7" with the satin texture would also be amazing.

Made in 2017?
These have the manufactured date stamped on the handle and the one delivered says 2017. This was sold and shipped by Amazon but it must be overstock. Speaking of stamps, the logo on the bottom scratched our glass stovetop. Also the seasoning it came with was splotchy and not non-stick. Overall this pan is not worth the trouble and is poor quality.

Great quality product
One of the best cast iron pans I ever used. Manufacture discontinued the satin finish which makes me sad because I like it better than non satin finish!

Excellent pan.Beautiful,durable,light weight,everything you could ask for.It gets sizzeling hot real fast,and that lets you prepare shrimp scampi or sauted scallops in a jiff.And because it's pre seasoned,food dosn't stick,so clean up is a breeze.This professional quality iron pan is must for any kitchen.

Great frying pan
Great frying pan, my second as i have the larger version. Treat initially as per instructions then everything washes off with hot water and little scrubbing. Got fed up buying "non stick" pans that only remain so for a relatively short time. This pan is not as non stick as a NEW non stick pan, it just lasts forever.
