Easy clean up.
This thing is awesome!What I hated the most about my WSM was cleaning up after a cook and trying to dispose of the grease collected in the water bowl responsibly. It was very messy. With the FIRE DIAL, the grease falls on it and most of it vaporizes, leaving residue that is easily scraped off and can be thrown in the trash.I did two cooks back to back, and it took me 10 minutes to clean the smoker.

Great for using a WSM 22 as a UDS
I wanted to try cooking hot and fast like a UDS, but didn't want to buy another cooker so I purchased this to using in place of the water pan in my WSM. I can now play with hot and fast cooking and low and slow on my WSM!

Can't add charcoal
Nice idea and the quality of the item is fine. The problem I have is with the concept itself and I should have thought of it before purchasing. There is no easy way short of removing the food and grill and lifting the entire plate to add coal to the bbq when using this. This makes it pretty impractical. I blame myself for not thinking of this rather than the manufacturer.
