This fitting is a 1/8 npt male to dual 1/8 female. If you're engine has any use for a 1/8 npt port then yes

Q: Is this safe to use for potable water?

If it isn't NSF certified for potable water, I wouldn't drink from it, especially given that it appears to be made in mainland China, where safety standards, where they exist, may be questionable.

Q: Regarding the stainless steel 1/8" npt m-f-f tee fitting: what are the working & burst pressures, please?

The through hole in these fittings is about 3/16 of an inch. I am returning these fittings due to that fact. Something to keep in mind if you get the working pressure or burst pressure.

Q: Can you tell me the pressure rating of this unit?

Not sure of pressure rating, but it is stainless steel. Used this for my LS Foxbody swap. Fue pressure regulator and gauge. I've had it installed for a year or two with no issues
