SAF is far better than other store brands.  I always use less of this than the recipe calls for because it is that good.

Do you use the same amount of SAF instant yeast as active dry yeast that a recipe calls for?

Actually, the equivalent would be a little less. 1 teaspoon of instant yeast is equal to 1 1/4 teaspoon of dry active. So if your splitting hair you only need to use 80% of active dry yeast measurement when using instant. That's why weighing is so much better than measuring volume, conversions are easy. The closest equivalent to instant yeast in the supermarket is bread machine yeast, in fact, I would stick my neck out to guess bread machine yeast IS probably instant yeast simply re-packaged as bread machine yeast. What's important to know about instant yeast is it gives the most uniform and repeatable results compared to all other "consumer" forms of yeast. That's why commercial bakers depend on it and scale using it in large batches with repeatable results without worry or messing around. Buy a bag, put it in an airtight container and store it in the freezer. I've kept mine that for 3 or 4 years with no ill effects and replace it just as a matter of routine. You will never use even half of it.

Great. I got a book with tons of bread machine recipes and they highly recommended this yeast. I also used it in my Thanksgiving rolls and it worked wonderfully

Interested in buying but reviewer has negative comments about expiration. How do I make sure it will be fresh or do you recommend buying somewhere els

I just received my order and it is a year old already. Manufacture date is 1/1/18, expiration is 1/1/20.  So effectively I have 1 year to use this product before expiration.  However, the price is good and the product should be good past the expiration date.
