This pineapple is the perfect size and has the perfect flavor for fruitcake! I've made fruitcake for years, and this pineapple is delicious! Pieces of pineapple are cut smaller as your fruitcake is sliced for serving. You don't need to worry about cutting fruits for fruitcake smaller prior to baking, when your cake is served, you cut large fruit pieces when you cut the cake. Relax, mix it up, bake it. Soak it with liquor of your choice, wrap it up tightly in plastic wrap, and refrigerate for two weeks prior to serving if possible. If not, go ahead and eat it. I always make twice as much fruitcake as needed, stash it away, keep soaking it with liquor, and eat it later. You won't be sorry.
