Is it supposed to taste bitter?

My understanding is that it does. However, I have been making muffins with this buckwheat and do not taste any bitterness. The recipe I use does not use cane sugar but, instead, ripe bananas and a small amount of maple syrup.

Is it third party tested for heavy metals?

Yes we test for heavy metals and we are well below the Parts Per Million allowed by the FDA.

What is the difference between this a regular buckwheat flour?

The nutritional values are much higher. The polyphenols are 50 to 100 times greater. It is also certified organic which not all buckwheat is.

Trans fats are unsafe at any level. Why are they used in this product?

Simple answer is stay away from Trans Fats
