Q: How much weight can jede brackets support? Thinking about the weight of the wood to make the table and also weight of things it can then hold?

i used it a wood shelf that i purchased at home depot 36 by 6 by 1 inch thick to hold books and related items but to answer your questions i very much doubt that the brackets can hold no more than 50 pounds or so, i used this number cause is the screws weight tolerance that i used to attach the brackets to the wall.

Q: How far out does it stick when folded against the wall?

About 1 1/4 inches when folded.
