Probe stopped working/pairing. I've tried several times to fix it. Fully charged. So why is there no replacement probe for sale?

Worthless product. You can't use it with the grill cover closed as the temp gets too high for it to function.

I see in another question it says the battery only lasts up to 2.5 years and is non replaceable, what do you do when the battery runs the course of it

Hiya! Technically speaking the battery is rated for at least 1000 recharge cycles. If you cook 1 steak every day, the product should last at minimum 2.5 years. If you cook 3 steaks a week, theoretically, the battery should last at minimum 6 years. Regardless, should the battery run out, please contact MEATER support and we'll figure out a way to get you a new probe. Cheers!

How long does a charge last when the probe is fully charged? I love to smoke my meat for several hours at a time.

A fully charged probe will last 24+ hours so your long cook will be fine. Happy smokin'!

what do you have to get to be able to leave and run to the store real quick an still monitor the temps? Separate device?

Yes. You'll need a second smartphone/tablet and to register for MEATER Cloud. The first phone maintains the Bluetooth connection to the probe, then your additional phone on the same Cloud account can monitor the cook anywhere it has internet connectivity.
