Really not sure. I used a larger PVC pipe to feed it through a wall, then sealed it with expanding foam insulation.

I think you're asking if this is a thermister. The answer is yes. The resistance changes with temperature.

The probe end would not be able to fit in a 1/4" ID.

You should be able to cover with a food grade sheath.
