Excellent Knife
This review is for the Dalstrong Gladiator 8" chef knife. The overall length is 14" (full tang). The blade is 8" and the handle is 6" with a very comfortable bolster & heel. Total weight is 11.57 oz (328 grams). It also comes with a heavy duty sheath. I'm a 69 yo woman with not much strength, a bit of arthritis but I love cooking, chopping and the whole process of making food. I've been looking for a largish, dependable chef's knife with enough weight that I can handle it to cut through carrots, onions and potatoes without too much help from me. I found it and it didn't break the bank ... always a plus 😉 It came out of the box very sharp. It was so well boxed it was hard for me to open. It filleted my cleaning sponge so well I didn't notice it until I wrung it out. Same with the package of Kirkland thick cut bacon. The weight is hefty and I can see it being a challenge if I need to handle it for a long period of time, maybe an hour or so. On the other hand the weight is more than enough to get through dense meat & veggies without tiring me out too fast. A small but heavy magnet/pin was also included that's now living on my fridge. Dalstrong recommends using a whetstone to keep it sharp so my next challenge is learning how to use one. This is one of the best kitchen investments I've made in a while. If I were stronger, I'd spring for the 9" cleaver. Instead I have the fillet knife, paring knife and the charcuterie board set on my list 😀

Extremely sharp and well balanced.
Excellent knife for cutting up chicken and beef. The knife is very sharp and cuts through the protein with ease. Based on my son's recommendation I bought this knife and have been extremely satisfied with the purchase. It's not cheap but well worth the money.

The first good knife I've owned
I'm not a knife expert by any stretch... Every knife I've owned before this is just a cheap kitchen knife I found at a random store for like $30-$50. Those knives weren't very sharp to begin with but quickly dulled to being pretty dangerous to even use. I was struggling to prep dinner and it just wasn't good. So I bought this knife and wow is it nice and sharp. Holding it is like Schroedinger's Blade. On the one hand it feels extremely dangerous to even hold because one false move and I'm slicing my hand open or my finger off... but on the other hand (the one not being sliced), it feels very solid and very balanced and it cuts things so effortlessly that it makes food prep WAY safer. Before I was having to really put pressure down to even cut an onion, now I'm gently sliding the blade right through everything like butter. So in terms of how effective this knife is... I'd say 100%. It feels great to hold. It has good weight to it. You can feel the quality just from holding it. Super easy to clean as well. My only concern with getting a fancy knife like this was maintenance... I have zero knowledge of keeping a knife sharp, or proper knife care, or anything... So I sort of "winged it" by getting a little simple knife sharpener off amazon that you just run the blade through a few times. I've used it a handful of times on the knife so far but honestly it didn't even need it. The blade is still sharp a couple months later of daily use. This is a no muss, no fuss, sharp as a razor knife that gets the job done. I'm super happy with it and glad I finally spent a bit more money on a quality kitchen knife. It makes chopping stuff fun.

Amazing "Old School" style customer service!
We bought this knife in February 2017 and it has been great! I noticed an issue in the blade in October 2017. I emailed the customer service for Dalstrong on a Friday explaining what the issue was, I was contacted that following Monday. I sent a picture of the flaw as well as the purchase order as requested. They told me that they apologize and this is a very uncommon issue and they would send a replacement. I received that replacement in less than a week, I opened and inspected it and it is flawless. This is an OUTSTANDING company that will stand behind their product! I recommend to anyone reading these reviews contemplating a purchase to buy it! The price is unbeatable, the quality is stellar and the customer service is unmatched. You will be happy with your purchase wether you're a professional chef or a home kitchen hobbyist. It feels great in the hand, the edge is beautiful and it hones perfectly. I only hand wash and store in included sheath, every other week or so I wipe down with mineral/cutting board oil and I steel hone before and after every use. Every so many uses I pass it through a ceramic hand sharpener and hone with the steel rod. It has maintained an amazing edge. I only wish they were actually manufactored in the US. Its a US company using German or Japanese steel (depending which line you buy) but made in China. Even though they're made in China they seem to have an immense quality control system that works and they stand buy it. Dalstrong is the only knives I will but from now on.

This is an excellent knife.
My Wife and I have been using cheap serrated knives for a long time. We decided to invest in some quality knives, and this is one of them. (we also got the steak knife set) This was a great investment. This knife is sharper than my wife's tongue. The weight is nice and balanced and who doesn't love full tang. This is a nice in-between brand, not too cheap not too expensive. The sheath is really nice. You don't need one of those cheap knife blocks. Just get a few quality knives that fit your needs and you can sharpen. We give this knife four Michael Myers thumbs up.

Perfection
I wanted to wait a while to give a review so I could use it for a few weeks first. I received my knife on June 6th. The knife came in a beautiful box, with a cute keychain inside, and a polishing cloth. The knife came in a Saya, which was just wonderful, fits perfectly (as it should!) After removing the saya and inspecting the knife, I was impressed with the look, it is a truly gorgeous knife. The wood is sublime in look and feel. The full tang adds wonderful heft, and it feels safe and well balanced in the hand. The most important aspect is how it cuts right? It is amazing, nice, clean cuts with NO drag. I was able to get 1/16th of an inch slices on everything I tried, from tomatoes and avocadoes, to sirloin roasts, raw and cooked for all. I am truly amazed by the quality, and highly recommend this knife for anyone who wants a knife that you can trust. The quality is worth at least double the price, the pride they take is amazing. My son, aspiring chef, is begging me for a full set of his own for when he graduates high school and goes to culinary school. I need to buy a full set for myself first! This is a buy it for life knife, I will be buying only their knives, I have no interest in any other brands now. They have a customer for life.

My New Workhorse
I'm a young chef, I've only been in professional business for about two years now with three years of culinary school behind me; so take everything I have with a grain of salt. I've been testing this knife for about a week now and I'll tell you, its been an absolute joy to use. I've usually been using it to prep for a breakfast shift (onions, half case of bell peppers, half box of mushrooms, tomatoes, etc). I only had to use a honing steel once on this knife for about a two hour prep session before I had to cut overripe tomatoes for omelettes. The only gripes I've had have with this knife is that the lamination on the absolutely stunning handle that came with my knife is about a half millimeter or less from being completely square with the tang of the knife on the top and bottom of the handle (or front and back depending on which way you look at it), and there is a slight defect with the lamination of the handle (about a 1 square millimeter or less spot) . It's not enough of a complaint to send this knife back since its one of the few knives I own that are perfectly balanced from it's tip to it's tang. And like I've said, I plan to make this knife my workhorse and main chef knife for work so I won't complain that it doesn't look the best (Though it does still looks amazing to be honest). I'm aiming for functionality, not perfection. And this knife definitely has the functionality and balance; definitely compared to the standard half-tang knife service knives I was using to prep before. I'm planning to slowly but surely replace all the knives in my kit to Dalstrong; I already have their Ravager cleaver, and I've already ordered a boning knife and a steel, and I'll be definitely ordering more knives in the future; whether its from the gladiator, phantom, or shogun series.

Universal Kochmesser
