I can't leave a high enough rating for this product. The original bag, purchased SEVEN years ago is presently in a sealed, plastic container in my freezer. I mixed up some homemade bread dough this morning and used this yeast - it is rising vigorously as I write this. The yeast has survived a power outage, where it returned to room temperature for a couple of days and then went back into the freezer, then a move to another city, packed in a box. It still proofs, beautifully. Frankly, I'd rather purchase this brand in smaller packages, as I don't bake nearly as often as I used to. I haven't ever found it in lesser amounts, so I will purchase another 1 lb. bag, when and if needed. There seems to be no necessity for doing so, presently. I'd rate LeSafre Saf-Instant Yeast at 10 stars, if I could - don't hesitate to order and store it in the freezer - you won't be disappointed...

Amazing for enriched doughs
The gold label of Saf-Instant yeast is usually difficult for me to find in supermarkets, so I'm very glad to see they available through Amazon. If you bake a lot of rich, sweet breads, I would definitely recommend this brand of yeast. For all other bakes, I tend to gravitate towards Fleischmann's, but I find best results with enriched doughs when using Gold Saf-Instant.

BEST YEAST I EVER USED
With Corona virus and these lockdowns it is next to impossible to buy yeast here in Arizona. A reviewer did not think it was authentic because his pack said it was produced in Mexico. Companies will often setup division in other countries to save on cost of shipping to other parts of the world. One user said the red label of SAF yeast was better. The red and gold labels are different. The red is for regular bread baking. The gold is for baking breads like sweet rolls because this yeast has a higher tolerance for sugar For years I used Feishmanns active dry yeast. Then this pandemic came and I could not find my yeast of choice so I tried this, and VERY GLAD I DID! You may. Be thinking “What am I going to do with a pound of yeast!” That is a legitimate concern here’s two ideas. 1 yeast will be good for years after the expiration date if you protect the yeast from light and heat. I put part of the yeast in the bottle at room temperature. The rest was put in a clean dry glass jar and stored in the bottom drawer of the fridge. To protect the yeast from light I wrapped the bottle in Black plastic. 2. Share some of the yeast with a neighbor who needs it. I love fresh hot bread. So I use my bread machine 2-3 times a week. I also brew my own wine. Why would I brew wine? Lots of reasons. Bread yeast keeps more of the fruit flavors from the juice than wine yeast. Brewing wine is stupid simple. Combine juice, sugar and yeast and let the yeast do their job All fermented foods sauerkraut, kimchi, Kefir and homemade wine are rich in probiotics to keep your gut biome healthy. By the way over 70% of your immune system is there in your gut biome. Commercial wines have been treated with potassium metabisulfite or potassium sorbate to kill the yeast. Unfortunately these chemicals also kill the helpful bacteria and probiotics. For years they completely overlooked the probiotics in homemade wine because they thought the alcohol would also kill the helpful bacteria and probiotics but research has started coming in and what they are finding is simply incredible. I cannot post links in reviews so if you are interested email me. When I make the wine I decide whether it will be a sweet or dry wine. You do this by adjusting the amount of sugar you add to the must. For baking bread and brewing wine this yeast is incredible
