How long is Old Amsterdam Cheese matured for , and once opened , what is the best way to store it , or keep it , whilst it is being used ? .

This is around 10- 12 months. Once opened you store the cheese for a couple of weeks. But you have to use the cheese slides often to keep the cheese fresh. To store the cheese is best around 4-8 degrees celcius.

If kept in the fridge , should it be stored on a plate with a lid , or a cover over it

Best is to store it with a cover or in plastic. So that the cheese kept close and can not dry out.
