The way I chose to cook these came out so good! They were juicy and tender. The fat rendered beautifully.If anyone is interested. Medium/high heat with a tiny bit of ghee in the frying pan. Season the chops with a good salt. (I use kosher) Get a good sear on each side (about three minutes per side) and pop them in the air dryer for 6-7 minutes at 180c. Cover loosely with foil to rest on a clean board or plate for 5 minutes before cutting. I also use a tea towel over the foil to keep them toasty,Tip: pat dry the chops before seasoning and searing. If they are too wet, they won't sear well.
