Fresh Mushroom Slices are flash frozen thus preventing the formation of ice crystals. Frozen Mushrooms are then slowly dried under a vacuum at increased pressure and temperatures. Under this pressure, the frozen water in the Mushrooms will be converted directly to a vapor and released bypassing the liquid stage This leaves the mushroom fully dry, intact and pristine in appearance. Mushrooms completely rehydrate in 30 seconds with the same texture as fresh! Preservation is possible because of the greatly reduced water content of about 1percent resulting in a 2 year shelf life. Pressure drying causes less or no damage to the mushrooms than other traditional, higher temperature, air drying methods. Pressure-drying does not cause shrinkage or toughening of the mushrooms being dried. In addition, flavors, aromas and nutritional content generally remain unchanged. Pressure-dried mushrooms can be rehydrated (reconstituted) much more quickly and easily because the process leaves microscopic pores.
