It’s better than expected
I got this knife just to see how it compares to my expensive knifes and I absolutely love this thing. It’s not going to beat those hand made and expensive knifes in the fit and finish department, but it’s very close and is an absolute gem of a knife.

Handles Like a Sportscar
The slight taper toward the blade is balanced at the front of the ferrule, and gives a good secure grip without giving the feeling your hand is creeping forward. The handle is a good length for fitting a wide range of hands but not long enough that you find it hitting your wrist when doing detail work with the tip of the blade.The handle shape is designed with a pinch grip in mind, and is the preferred grip shape for pinch grippers (like me). I least prefer rectangular shaped handles found on most Western knives. Many premium European knives have rectangular cross-section riveted handles. The classic, three rivet style has existed for centuries in Europe, but was famously touted as a sign of quality by a well-known German brand in recent decades...you know, the one with the twin stick-men on the blade (sorry Chef Ramsay). The Gutoky has a hidden tang which is way strong enough for a chef knife...a full tang with large rivets, while aesthetically reassuring, is simply unnecessary and overkill for the duties performed with a chef knife.A heavy, riveted handle is possibly over-engineered for a precision tool like a chef knife, but they’re rightfully a great choice. They’re classic looking, have a nice weight in the hand, and many western cooks and chefs are just used to them. While a kitchen knife with a handle that durable is not a necessity, many people just prefer a beefy handle. This style offers a certain sense of security while you’re using it, and nothing beats that.Because many Japanese knives like this Gutoky have a hidden tang and not the thick, riveted tang that German knives do, they can fit more elegantly into their handle, allowing the handle material to shine on its own. Some folks worry that this style of handle may be weak, but unless you’re using your knife to drive nails into a wall, they hold up fine. Because they’re not riveted in place, they’re also much, much easier to repair in the unlikely event that something does happen to it.In conclusion, if you like ‘em big and chunky, go western. If you want something a little more elegant to finesse, go Japanese. But at the end of the day, I strongly believe you’re going to fall in love with your Gutoky knife either way.Happy chopping!

Nice high end knife....
This is a really nice and sharp high end knife. It comes well packaged and would work great as a gift as well. Simply wrap it and you're all set. I've used it on alot of different foods and no issues. I really like how sharp it is and seems to keep it's edge for quite awhile. It also has a nice look to it. I've slowly been replacing my knives with a better selection and better looking. This one fits the bill really well. I wouldn't hesitate on buying this knife.

Firm grip, flexible blade
What's first going to impress you about the Gutoky Boning Knife is the packaging. So well done with the magnetic lid and rich colorful box. Which makes it great for gift giving. That aside the knife feels really good in average sized hands. If you have large hands you may want to reconsider. And because its designed for boning, the steel blade is flexible enough to reach those hard to get areas. The knife comes super sharp with its beautiful polished handle and decorative blade. All in all, the Gutoky knife makes a perfect addition to any cutlery collection.
