Was to small for what I needed it for. I should have read more about this product before purchasing. The product is made well.

I bought this pan to make a type of cookie called a French financier. They are a tea cake style cookie that uses almond flour and brown butter (they are delicious, by the way). I got this pan thinking the non-stick would help when taking the cookies out of the pan. I buttered the pan before adding the batter and had no problems with the cookies sticking. I was a little concerned about the butter burning however. The next time I tried not using the butter thinking the non-stick would do the job. Unfortunately, it didn’t. The cookies stuck and in trying to get them out of the molds, the cookies broke or left some of the cookies sticking to the pan. I baked another batch and used Baker’s Joy purchased from Amazon. Baker’s Joy is a non-stick spray with flour mixed in and is designed for baking. I spray that in the pan and baked another batch of cookies and they came out perfectly. The released from the pan perfectly. These pans are good. They hold the heat well and are easy to clean. With the Baker’s Joy, they are truly non-stick. Without either greasing the pan or using Baker’s Joy they are not so “non-stick” which is why I knocked off a star on the rating.

I have been trying to perfect a French Financier and this pan makes that possible. The shape and curvature makes every bite have that chewy edge that makes the almond cakes perfect.
