Rosamonte Especial does not carry the "USDA Organic seal". Having visited the Rosamonte plantation in Apóstoles, I was told by the an agricultural engineer there "We do not use artificial pesticides or fertilizers." What is the difference between Rosamonte "Special Selection" and regular Rosamonte yerba mate?

INCORRECT. Especial is LESS robust than Original. The aging process mellows the flavor. As someone who loves the iconic, intense flavor or Rosamonte Original, I found this version disappointing. If you need a comparison, it tastes similar to Canarias regular. Think of it as Rosamonte for folks who don't like Rosamonte, (because the flavor is 'too strong'). Or, the difference between espresso, (Original), and a pour-over, (Especial).
