CalphalonPremier Ceramic Nonstick 7-Qt. Dutch Oven with Lid, Midnight Blue

I ordered this pot for the fact that it states that it will work on induction cook tops. Well, I can’t test that fact at the moment because we are remodeling, and our stove is in the living room, but I can say that it passes the magnet test. I placed the magnet on the bottom, and it held strongly so I have no real doubt that it will work. I have been using it on a glass cooktop in our other kitchen and I will say that it works beautifully. It has a smooth outer finish that will not scratch my glass top. Also, because of the smooth finish, it wipes clean easily. What I like the most, and the biggest reason that I ordered this dutch oven, is because of the ceramic coating. I haven’t had ceramic cookware and wanted to try it. I am not disappointed. Again, I’m not Truely able to put it to the test on my induction cooktop so I feel all of the issues I have are the electric cooktop and not the pan, as I have the same issues with my All-clad stainless cookware as well. Electric cooktops are just not as even and consistent as gas or induction. Anyway, nothing that I have cooked has even come close to sticking. In fact, most things come out just with the pressure of running water. It couldn’t be easier to clean. They do advise not putting in the dishwasher but that isn’t a problem for me because I never do that anyway, but I know for some that might be a deal breaker. This dutch oven is attractive and usable. The gray ceramic compliments the blue coloring and metal handles. It’s a nice size and has become one of my go-to cookware items.

The Calphalon® Premier Ceramic Nonstick 7-Qt. Dutch Oven with Lid, is like no Calphalon I have seen before, and I am a long time fan of the brand. it is not much like any other cookware I have either. The pan is anodized aluminum with a heavy ceramic coating (see thickness in edge-on photo). That makes for a good non-stick coating, and one which is definitely non-toxic, but how much you like the pan will absolutely depend on what you want to use it for. It does not heat up as quickly as my old (anodized aluminum) Calphalon. It does not retain heat as well as my cast iron (old dutch oven) or clay cloches. At this point I want to say that I am not a fan of baking bread in a Dutch oven. I much prefer clay, unglazed clay. I have tried th3 dutch oven method, and find it dangerous, and less effective. You nearly always lose the rise dropping it into a hot pan, when using unglazed clay will provide the humid environment you need for good oven spring.However, for dishes which need to be started on the stove and finished in the oven, it is excellent, and those are the dishes which are typically tough to clean up. This pan does clean up well, and easily. I should mention that they recommend hand washing, so for those of you for whom that might be a deal breaker... be advised.yhe pan is anodized aluminum with a thick ceramic glaze. It works with induction coooktops (though I do not understand how, given that it is aluminum). It works with conventional cooktops, gas and electric too, and can take high heat. The handles do not get hot like on the old Calphalon, which makes it easier to handle. For those looking to replace your old Calphalon because you have moved to induction (and I have been working on that) this is well worth considering. It is bit the same, but has other good qualities.If I could I would rate this 4.5 stars. For stove- top to oven use, 5 stars; for bread I would rate it 4 stars.

But the best part? Absolutely no sticking! Cleanup was a breeze, too. Even though some spots looked like they might be baked on, they were wiped away easily with just soap and a sponge. It took less time to hand wash than it would have to load and unload the dishwasher.If you're looking for a high-quality, durable, easy-to-clean Dutch oven, I highly recommend this one!
