The olive groves themselves are located at a height of over 500 m above sea level in an area of pristine natural beauty, far from larger cities and . The groves have been maintained for centuries by the same monk order and classified and monitored according to strict EU / international standards. The harvested olives are brought directly to the mill within a few hours for sorting and selection. Olives are hand selected according to size and . Individual olives that do not meet the strict criteria for grinding are dided. Only 50-60% of the harvested olives finally get into the mill to be processed into oil. The oil is extracted from the olives using state-of-the-art modern machines. Once the oil is produced, it is stored in modern stainless steel tanks at optimal temperature before filling. Qadisha Valley comes in dark glass bottles to reduce the influence of light on the aging process. The constant goal throughout the production process is to minimize the oxidation of the oil. This in turn extends the fresh taste and maximises the -promoting effects known from a high-quality virgin olive oil.
