Q: where are these porcini harvested?

I’ve bought dried mushrooms from San Francisco and Italy before. This brand seems to come from New York.

Q: Do these need to be soaked to remove grit?

Dried Mushroom all need to be soaked in hot water to be rehydrated and when you do that the dirt and grit will come off. I use these for Mushroom Risotto. I use a good handful and put in a 2 cup glass measuring cup. Then i cover with water and microwave for 2 1/2 minutes. Take out of microwave and use a spoon and push the mushrooms into the water as much as you can as they float a bit. Let sit on counter about 15 minutes and then stir the mushrooms a bit. Let sit and all the debris sinks to the bottom. I remove the mushrooms and squeeze them over the cup to get the rest of the mushroom water and to make them as dry as i can. Then chop up for the risotto recipe and use the mushroom water for the flavoring and color along with the chicken broth. You need to pour the liquid out slowly so that the dirt and grit at the bottom isn't used. Love this mushrooms. Great quality and intense flavor.

Q: why is vitamin d level not mentioned in the nutrition label when dried mushrooms are supposed to have vitamin d?

You would have to ask the manufacturer that question
