Guiltless and delicious
My ice cream maker stays busy all year, but especially in summer. Nothing beats this ice cream mix if you use this recipe. Of course there's a recipe on the box, but I use 2% milk (1 2/3 cup) and 1/3 cup cream so I save calories without giving up great texture and taste. Mostly I use the vanilla mix since I like to add various things to make wonderful flavors like peaches, pitted cherries, pumpkin and spices, crushed peppermints to name a few, but getting a really wonderful chocolate ice cream with depth of flavor is not so easy, so I just go with this mix for that.I've not been able to find the chocolate flavor in any store and am grateful it's available here for a reasonable price (at this writing anyway). The vanilla mix is higher priced here for some unknown reason and not prime shipping so I was glad to find I could replenish my stash at a local store.I've been making my own ice cream with this brand mix for several years now and find it so much easier than making my own base. The texture and flavor are great and there are no unpleasant ingredients. The prep is wonderfully fast since I just blend the milk/cream and a box of this mix with a stick blender right in the 1 quart container that goes in my ice cream maker. Couldn't be easier and the results are heavenly. Any left over stores well in the freezer.Final note: To make your own 'magic shell' topping which my grandchildren always ask for, melt a tablespoon (or a bit more) of coconut oil and up to a cup of semi-sweet chocolate chips together, stirring constantly (takes just a couple of minutes) and drizzle over the ice cream. I store the remainder in a small mason jar and reheat in the microwave for 30 seconds for the next dessert. It's great over chilled fruit too.

A little too sweet, but you can add to it
I used this mix as a test-run for my new ice cream maker. I added about 2 TB of cocoa powder to the mix to increase the chocolateyness, then mixed well in a bowl until it was all incorporated. The result was a wonderfully sticky, stretchy chocolate ice cream, almost more like a gelato. This is a great ice cream base although it is slightly too sweet for my liking, but adding dark or unsweetened chocolate to it helped cut the sugariness.

What Ice Cream should taste like
I searched and search in stores trying to find Junket Ice Cream mix. Could not locate this in any stores. Was always told this was a 'seasonal item'. Well, not on Amazon. I have tried other packet mixes and most are horrible tasting or very grainy.I ordered one of each Ice Cream Flavor. The flavors are rich, smooth and tastes as if it was freshly made using all the costly ingredients. I personally prefer Vanilla but the Strawberry and Chocolate are great too. Each box makes approximately one quart which is perfect for most Electric Ice Cream makers. This leaves room if you chose to add other things such as nuts, chocolates, marshmallows or fruits. Some people have complained because this calls for 1 1/2 cup Milk and 3/4 cup of heavy cream. Sure cream is expensive however when I was making this from scratch that used 3 cups of cream and 2 eggs along with the sugar and this had to be cooked and cooled. The junket is quick mixing and into the freezer. With all the disappearing products from years ago I am happy to see that Junket has survived and is still around for the kids of the new generation to experience what real Ice Cream is supposed to taste like.Sure you can use Soy Milk, Rice Milk on and on but frankly if your going to eat Ice Cream, then make it the real way... With CreamAnyone that doesn't like this product obviously has never been on a Farm and experienced real tasting foods.
